Pudding Cake


From my sister-in-law, Lindsay. (I copied and pasted it.)

I have no idea where I got this recipe but it's oh so good!
serves 8

1 c flour
3/4 c sugar
1 1/2 T unsweetened cocoa powder
2 t baking powder
1/2 t salt
3/4 c chopped nuts (I like walnuts or pecans)
3/4 c milk
2 T melted butter
1 t vanilla
1 c hot water
1/2 c chocolate syrup
Whipped cream, milk or vanilla ice cream

1. Heat oven to 350. Cover 8x8 baking pan with cooking spray.

2. Mix flour, sugar, cocoa, baking powder, salt, and nuts in large bowl. Stir in milk, butter and vanilla until well mixed. Scrape into prepared dish.

3. Stir together hot water and syrup in small bowl. Pour over batter.

4. Bake for 35 mins or until cake is done and pudding bubbles up on sides. Cool 20 mins. Serve warm or at room temp (It's obviously best warm). Spoon extra syrup on top and serve with whipped cream, milk or vanilla ice cream. ENJOY!

Pork Chops in Red Sauce

6 pork chops or 10 boneless pork chops
1 can of Tomato soup
1/2 cup water
1 tsp Worcestershire sauce
1/2 tsp  salt
3 potatoes, quartered
4 carrots, cut in half and then cut lengthwise


Brown pork chops in skillet
Place in the bottom of a casserole dish
Add all other ingredients to dish
Cover and bake 45-60 min at 350 degrees

Chicken and Rice Casserole

Several pieces of boneless skinless chicken
1 can of Cream of chicken Soup
1 can of Cream of Celery Soup
1 cup uncooked rice
1 1/2 cups water
salt and pepper to taste

Brown chicken in skillet with hot oil then place in bottom of casserole dish that has a fitted cover
Add rice over chicken
Add both soups that have been diluted with the water
Add salt and pepper
Cover and  bake 350 for 1 hour

Taco Soup

  • Ingredients

    • 2 pounds ground beef
    • 2 cups diced onions
    • 2 (15 1/2-ounce) cans pinto beans
    • 1 (15 1/2-ounce) can pink kidney beans
    • 1 (15 1/4-ounce) can whole kernel corn, drained
    • 1 (14 1/2-ounce) can Mexican-style stewed tomatoes
    • 1 (14 1/2-ounce) can diced tomatoes
    • 1 (14 1/2-ounce) can tomatoes with chiles
    • 2 (4 1/2-ounce) cans diced green chiles
    • 1 (4.6-ounce) can black olives, drained and sliced, optional
    • 1/2 cup green olives, sliced, optional
    • 1 (1 1/4-ounce) package taco seasoning mix
    • 1 (1-ounce) package ranch salad dressing mix
    • Corn chips, for serving
    • Sour cream, for garnish
    • Grated cheese, for garnish
    • Chopped green onions, for garnish
    • Pickled jalapenos, for garnish

    Directions

    Brown the ground beef and onions in a large skillet; drain the excess fat, then transfer the browned beef and onions to a large slow cooker or a stockpot. Add the beans, corn, tomatoes, green chiles, black olives, green olives, taco seasoning, and ranch dressing mix, and cook in a slow cooker on low for 6 to 8 hours or simmer over low heat for about 1 hour in a pot on the stove. To serve, place a few corn chips in each bowl and ladle soup over them. Top with sour cream, cheese, green onions and jalapenos.

    Chicken Fajitas

    Ingredients:
    1 tablespoon Worcestershire sauce
    1 tablespoon cider vinegar
    1 tablespoon soy sauce
    1 teaspoon chili powder
    1 clove garlic, minced
    1 dash hot pepper sauce
    1 1/2 pounds boneless, skinless chicken
    thighs, cut into strips
    1 tablespoon vegetable oil
    1 onion, thinly sliced
    1 green bell pepper, sliced
    1/2 lemon, juiced
    Directions:
    1. In a medium bowl, combine Worcestershire sauce, vinegar, soy sauce, chili powder, garlic and hot pepper sauce. Place chicken in sauce, and turn once to coat. Marinate for 30 minutes at room temperature, or cover and refrigerate for several hours.
    2. Heat oil in a large skillet over high heat. Add chicken strips to the pan, and saute for 5 minutes. Add the onion and green pepper, and saute another 3 minutes. Remove from heat, and sprinkle with lemon juice.

    CYT: Overnight Oatmeal

    3 cups water
    1 1/3 cups steel-cut oats, preferably McCann's
    1/4 teaspoon salt
    2 tablespoons dried fruit or 1/4 cup fresh berries
    1/4 cup skim milk
    2 tablespoons light brown sugar or pure maple syrup

    Combine the water and oats in a medium saucepan, cover, and leave out overnight

    In the morning, add salt and bring to a boil. Partially cover and cook over medium heat for about 5 minutes, stirring frequently, until oatmeal is creamy but still chewy. Add dried or fresh fruit and milk for the last minute of cooking. Stir in brown sugar or maple syrup and serve.

    4 (8 in) flour tortillas
    2 large eggs
    6 large egg whites
    1/2 (4.25 oz) can chopped green chiles
    1 scallion, chopped
    2 tablespoons coarsely chopped fresh cilantro
       freshly ground black pepper
    1 teaspoon unsalted butter
    3 oz turkey or chicken breakfast sausage links, chopped or patties crumbled
    1/2 cup shredded low-fat Monterey Jack, Cheddar, or mixed "Mexican" cheeses
    2 tablespoons jarred salsa, plus more for garnish if desired
       Hot sauce


    Preheat oven to 350 F. Spread tortillas over a baking sheet and set aside

    In a bowl, combine eggs, egg whites, green chiles, scallion, cilantro, and a pinch of black pepper. Whisk with a fork

    Heat the butter in a medium nonstick skillet over medium heat. Add the sausage and cook, stirring, until cooked, 2 to 3 minutes. Turn the heat to med-low. Put tortillas in the oven to warm. Add egg mixture to the pan and cook, stirring often, until the eggs are set in curds, 1 1/2- 2 minutes. Remove from heat. Add cheese and stir.

    Place warm tortillas on plates. Spoon eggs in a line down the center of each tortilla. Add about 1/2 tablespoon salsa. Fold in the top and bottom, then roll sides. Serve immediately with hot sauce and top with more salsa if desired.

    Ingredients:
    2 medium ripe avocado, peeled and
    cubed
    2 tablespoons salsa
    2 cloves garlic, peeled
    1/2 teaspoon salt
    Directions:
    You have scaled this recipe's ingredients to yield a new amount (12). The directions below still refer to the original recipe yield (6).
    1. In a food processor, combine all ingredients; cover and process until smooth. Transfer to a small bowl; serve immediately. From Allrecipe.com

    Crockpot Potato Soup

    8 russet potatoes, peeled and cubed
    2 leeks, chopped
    1 medium onion, chopped
    1 rib celery, diced
    4 chicken bouillon cubes
    1 TBSP dried parsley flakes
    5 cups water
    1 TBSP salt
    pepper to taste
    1/3 cup butter
    13 oz can evaporated milk
    shredded cheddar cheese (optional)
    bacon bits (optional)

    Combine all ingredients except milk cheese and bacon into a slow cooker and cover. Cook on low for 8-10 hours, or on high for 3-4 hours. Stir in evaporated milk during the last hour. Mash potatoes until soup reaches your desired smoothness. Garnish with cheddar cheese and bacon bits if desired.

    Bow Tie Pasta with Tomatoes and Bacon

    5 slices bacon, cut into 1 inch pieces
    1 medium onion, finely chopped
    1 can diced tomatoes with garlic and onion
    1 can chicken broth
    3 cups uncooked bow tie pasta

    In a big skillet cook bacon pieces until done. Reduce heat and add onion and cook until onion is tender (2-3 mins). Stir in tomatoes, broth, and uncooked pasta. Heat until boiling, then reduce and simmer for 10-12 minutes until pasta is done. Remove from heat and let stand for 3-5 minutes.
